Corn and Lettuce Wraps Recipe

​Mexican Street Corn

  • 2 ears sweet corn on the cob - Cooked* (or a 15 ounce can of fire roasted corn)

  • 2 tablespoons cilantro - chopped, or more to taste

  • 1/2 large lime - juice and zest

  • 1/4 teaspoon smoked paprika

  • 1/4 teaspoon chili powder

  • 1/8 teaspoon garlic power

  • 1/3 heaping cup cotija cheese* - crumbled, or more to taste 

Sauce

  • 1/4 cup mayonnaise

  • 1/4 cup sour cream or yogurt

  • 1/4 teaspoon chili powder

  • 1/4 cumin

  • 1/4 teaspoon smoked paprika

  • 2-3 tablespoon lime juice to taste

 

Assembly

  • 1 head bibb lettuce - leaves separated*

  • 1 rotisserie chicken shredded
